Ingredients

  • 1 pound of ground turkey or chicken

  • 1 cup of quinoa

  • 2 tablespoons of extra virgin olive oil

  • 1 onion, grated or grilled (for tastier results)

  • 1 fresh tomato, grated

  • 3 cloves of garlic, minced

  • 1/2 teaspoon paprika

  • 1/2 cup of finely chopped mint

  • Salt + Pepper to taste

Directions

  • In a large bowl, combine the ground turkey or chicken, quinoa, grated or grilled onion (depending on preference), grated tomato, minced garlic, paprika, finely chopped mint, salt, and pepper. Mix all the ingredients well until they are thoroughly combined and form a pliable mixture.
  • Refrigerate the mixture for about 1 hour to make it easier to shape the meatballs.
  • Preheat the grill or oven to medium-high heat.
  • Shape the mixture into meatballs and place them on the grill or a baking dish if using the oven.
  • Grill, fry, or bake the meatballs, turning occasionally, until they are cooked through and browned on the outside. If grilling or frying, it usually takes about 12-15 minutes. If baking, it usually takes about 20-25 minutes.
  • Once cooked, remove the meatballs from the grill or oven and let them rest for a few minutes. Serve the meatballs as desired and enjoy!

Notes

  • With 1 pound of ground turkey or chicken, you could make approximately 20-25 meatballs, depending on their size. Each Serving is 3 Meatballs.
