Ingredients

  • 2 pounds fresh mussels, or 10.5 oz cleaned mussels

  • 1.5 cups of cherry or grape tomatoes

  • 1 green hot pepper or habanero, finely chopped

  • 4 cloves garlic, minced

  • 1.5 cups white wine

  • 1/4 cup organic tomato paste or 1/2 cup tomato sauce

  • 3/4 cup crumbled feta cheese

  • 1 cup of fresh parsley, chopped (for garnish)

  • Extra virgin olive oil for cooking

  • Salt and pepper to taste

  • Dried oregano for seasoning

Directions

  • Heat a drizzle of extra virgin olive oil in a large, deep skillet over medium heat.
  • Add minced garlic and chopped hot pepper/habanero. Sauté until fragrant.
  • Add cherry tomatoes and cook until they start to soften.
  • Stir in organic tomato paste and white wine. Allow flavors to meld together, simmer for a few minutes.
  • Add cleaned mussels to the skillet, season with salt, pepper, and a sprinkle of dried oregano. Stir well to coat mussels with sauce.
  • Cover the skillet with a lid and cook until mussels open up. Discard any mussels that do not open.
  • Once mussels are cooked, remove skillet from heat. Sprinkle crumbled feta cheese evenly over mussels.
  • Preheat oven’s broiler. Place skillet under it for a few minutes until cheese melts and turns golden brown.
  • Remove skillet from oven and garnish with freshly chopped parsley.
  • Drizzle with a bit more extra virgin olive oil and sprinkle with a pinch of dried oregano.
  • Serve mussels saganaki immediately as an appetizer or main course. Enjoy its delightful combination of flavors and textures. It pairs wonderfully with crusty bread or can be savored on its own.
