  • x2 lbs (900g) beef chuck, cut into cubes

  • 1 large red onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1/2 cup dry red wine

  • 1/4 cup red wine vinegar

  • 1 can (14 oz/400g) diced tomatoes

  • 1 tbsp tomato paste

  • 1 cinnamon stick

  • 4-5 cloves

  • 3 bay leaves

  • Salt and black pepper, to taste

  • Fresh parsley, chopped, for garnish

Directions

  • Prepare the Beef: Pat beef cubes dry and season with salt and pepper.
  • Sear the Beef: In a pot, sear beef until browned. Add onions and garlic, sauté until translucent.
  • Deglaze the Pot: Pour in red wine and vinegar, scraping flavorful bits.
  • Enhance the Flavor: Add tomatoes, tomato paste, cinnamon stick, cloves, and bay leaves.
  • Simmer to Perfection: Cover and simmer for 2-2.5 hours until beef is tender.
