Ingredients

  • 2 cups fresh spinach, chopped

  • 1 cup leeks, finely chopped

  • 1 tablespoon fresh dill, chopped (optional for added flavor)

  • 1 cup Trader Joe's Authentic Feta Cheese, crumbled

  • 1 cup low-fat ricotta cheese or Greek yogurt (optional for creaminess)

  • 2 tablespoon olive oil (or a small amount for sautéing)

  • Salt and pepper, to taste

  • 6-8 sheets gluten-free filo dough (or gluten-free rice paper if preferred)

  • 1 egg, beaten (for egg wash)

Directions

  • Prepare the Filling:
    In a large skillet, heat a small amount of olive oil over medium heat.
  • Add the chopped leeks and sauté until soft and translucent, about 5 minutes.
  • Add the chopped spinach and dill (if using), and sauté until the spinach is wilted and the mixture is tender.
  • Remove from heat and let it cool for a few minutes.
  • Add the Feta-Optionally, you can mix in some low-fat ricotta cheese or Greek yogurt for added creaminess. Season with salt and pepper to taste.
  • Assemble the Spanakopita:
    Preheat the oven to 375°F (190°C).
  • Lightly grease your baking dish with cooking spray or a bit of olive oil.
  • Place the first sheet of gluten-free filo dough in the dish, brushing it lightly with olive oil or melted butter.
  • Add 2-3 more sheets of filo dough, brushing each with oil, making sure the entire bottom is covered. The filo sheets should overlap slightly, forming a solid base.
  • Spread the cooled spinach and leek mixture evenly over the filo dough.
  • Layer the remaining filo sheets on top, brushing each with oil.
  • Brush the top layer with a thin coat of the beaten egg to help it brown and crisp up while baking.
  • Bake:
    Place the dish in the preheated oven and bake for 25-30 minutes, or until the filo pastry is puffed up and golden brown.
  • Serve:
    Remove from the oven and allow it to cool slightly before slicing into squares or rectangles.
