Ingredients

  • 8 ounces smoked salmon, thinly sliced

  • 4 cups mixed salad greens (such as arugula, spinach, and watercress)

  • 1 orange, peeled and segmented

  • grapefruit, peeled and segmented

  • 1 avocado, sliced

  • 1/4 cup red onion, thinly sliced

  • 2 tablespoons fresh dill, chopped

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon honey

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup pomegranate seeds

  • 1/2 cup small cubes of feta cheese

  • 1 cup cherry tomatoes, halved

Directions

  • In a large bowl, combine the mixed salad greens, orange segments, grapefruit segments, avocado slices, red onion slices, chopped dill, pomegranate seeds, crumbled feta cheese, and cherry tomato halves. Toss gently to combine.
  • In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, and honey until well combined. Season with salt and freshly ground black pepper to taste.
