Ingredients

  • 3 boxes of organic chicken broth

  • 2 stalks of celery with leaves, chopped

  • 2 carrots, peeled and chopped

  • 1 whole onion, peeled and left intact

  • 1 rotisserie chicken breast, shredded (use only part of it)

  • Salt and pepper, to taste

  • 1 whole egg + 1 egg yolk

  • Juice of 2-3 lemons, depending on your taste preference

  • Fresh dill, chopped, for garnish

Directions

  • Prepare the Soup Base: In a large pot, combine organic chicken broth, chopped celery, carrots, whole onion, shredded rotisserie chicken breast, and chicken bouillon cubes. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender and flavors meld.
  • Prepare the Avgolemono Sauce: In a separate bowl, whisk together 1 whole egg and 1 egg yolk. Gradually add a teaspoon of hot soup broth to the egg mixture, whisking constantly. Continue adding a few teaspoons of hot broth, whisking continuously, until the egg mixture is warmed.
  • Add the Avgolemono Sauce: Slowly pour the tempered egg mixture back into the pot of cooled soup, stirring gently and continuously. Avoid high heat to prevent curdling. If needed, reheat the soup over low heat, stirring gently, until it reaches your desired temperature.
    THIS STEP IS EXTREMELY IMPORTANT FOR THE EGG WASH NOT TO BRAKE!
  • Season and Serve: Remove the whole onion from the soup. Season the soup with salt and pepper to taste.
  • Sprinkle with Fresh Dill: Just before serving, sprinkle the soup with fresh chopped dill. The dill adds a refreshing herbaceous note to the soup.
