Ingredients

  • 4-5 small baby organic bananas (or 2-3 regular bananas)

  • 1 cup coconut flour (gluten-free)

  • 1/2 cup shredded unsweetened coconut

  • ¼ cup small pieces of cut-up dried mango in small pieces

  • 1 tsp vanilla extract

  • 1 tbsp monk fruit sweetener

  • 1 tsp pumpkin spice (or a blend of pumpkin spice and cinnamon)

  • 2 eggs

  • ½ tsp baking soda

  • 1 tsp baking powder

  • ¼ cup of coconut oil (plus extra for greasing the pan and topping the batter)

  • optional: sprinkle of date sugar and cinnamon on-top

Directions

  • Preheat the Oven: Set your oven to 350°F (175°C).
  • Mash the Bananas: In a large mixing bowl, mash the bananas until smooth.
  • Combine Dry Ingredients: In a separate bowl, mix together the coconut flour, shredded coconut, dried mango pieces, pumpkin spice, baking soda, and baking powder.
  • Mix Wet Ingredients: Add the vanilla extract, monk fruit sweetener, eggs, and
    the 1/4 cup of coconut oil to the mashed bananas. Stir until well combined.
  • Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until a smooth, gluten-free batter forms.
  • Prepare the Pan: Grease a cake pan with coconut oil.
  • Transfer the Batter: Pour the batter into the greased pan, spreading it evenly.
  • Top with Coconut Oil: Drizzle a bit of extra coconut oil on top for a golden finish.
  • Bake: Bake the cake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
